Breakfast Casserole
Summer is right around the corner and with kids getting out of school and busy summer schedules this breakfast casserole is the perfect make-ahead recipe. This is also a great recipe for teaching children how to cook!
The ingredients are simple and you can add more vegetables if you want, but this is how we normally make it at the farm.
You need a 2 lb. bag of hashbrowns, 2 cups of cheese (we use a blend of whatever we have), 1 cup raw chopped onions, 1 cup cooked mushrooms, 1 lb. cooked sausage, 8 eggs, 1 cup of milk (half and half or heavy cream work as well), 1 teaspoon dried thyme, 1/2 teaspoon garlic salt, and salt and pepper to taste.
In a large mixing bowl mix the hashbrowns, thyme, garlic salt, salt, and pepper. In another bowl beat the eggs with a whisk until smooth. Then take a 9″x13″ ceramic or glass baking dish and spray it with cooking spray. From here you layer everything:
Add the hashbrowns:
Evenly spread the mushrooms and onions:
Evenly spread the sausage:
Evenly spread the cheese:
Slowly pour the eggs over the casserole so you don’t disturb the layers:
Place the casserole in a 350º oven and baked for 30-45 minutes or until the eggs are set and the edges are golden brown.
You can mix and layer this recipe the night before and bake it the next morning. You can also freeze the leftovers if you do not plan to eat them up in the next couple of days.
The delicious aroma of this casserole baking will have everyone out of bed and ready to start their day!
Breakfast Casserole
Ingredients:
- 2 lb. package Shredded Hashbrowns
- 2 cups Shredded Cheese
- 1 cup raw chopped Onions
- 1 cup cooked Mushrooms (this is about 2 cups quartered raw mushrooms)
- 1 lb. cooked Sausage
- 8 Eggs
- 1 cup Milk, Half & Half, or Heavy Cream
- 1 teaspoon Dried Thyme
- 1/2 teaspoon Garlic Salt
- Salt & Pepper to taste
Instructions:
- Preheat oven to 350º F. Spray 9×13 baking dish with cooking spray.
- In a large bowl mix hashbrowns, garlic salt, thyme, salt, and pepper.
- In another large bowl whisk eggs and milk together until smooth.
- Layer ingredients in baking dish in the following order: hashbrowns, onion, mushroom, sausage, cheese, egg.
- Bake for 30-45 minutes or until eggs are set and edges are golden brown.
Note: Casserole can be made the night before and leftovers can be frozen.
