Oatmeal Cookies

I love cookies. Every year when the Girl Scouts are mobilized I buy an extra box of Samoas and leave them in my refrigerator until my birthday as an exercise of self control. That doesn’t mean I can’t have delicious cookies other times of the year though! Today I’m sharing my favorite recipe for oatmeal cookies, and let me tell you, I started craving these again just processing the photos.

These are ingredients I always have in the house (and if you don’t, you should really rethink that). Maybe not healthy, but they certainly look wholesome.

I always make these in the Kitchen Aid. You could also do it with a hand mixer. I wouldn’t recommend by hand as an electric mixer can cream butter and sugar faster and easier.

So first cream your butter and sugars, taking the extra time to be sure they are super smooth makes for a delicious cookie in the end. Once they are thoroughly combined add your eggs one at a time and blend until combined. Add in your vanilla and molasses and blend until combined.

In a separate bowl whisk the flour, baking soda, and salt. Gradually add this to the sugar mixture on low then increase your mixer speed to be sure everything is combined. Add in your oats and mix on medium until combined. Press a piece of plastic wrap against the dough and chill it for 30 to 60 minutes. Legally I probably shouldn’t tell you this dough is delicious, but as long as you don’t make an issue of it, who will know?

After the dough has chilled form tablespoon sized balls and placed them on a parchment lined baking sheet. I use a scoop to do this. (I’ve said it before, invest in these, you’ll use them for so many things.)

Bake the cookies in an oven preheated to 350º F for 10 minutes or until the edges are golden brown. The recipe makes around 5 dozen.

Warm out of the oven with a glass of cold milk is the very best way to enjoy these, but they’ll last three to five days in a sealed container. Let me know what you think!

Oatmeal Cookies

Ingredients:

  • 1 cup softened Butter
  • 1 cup packed Brown Sugar
  • 1/4 cup Granulated Sugar
  • 2 large Eggs
  • 1 tablespoon Vanilla
  • 1 tablespoon Molasses
  • 1 1/2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 1/2 teaspoons Cinnamon
  • 1/2 teaspoon Salt
  • 3 cups Old Fashioned Oats

Instructions:

  1. Cream butter, brown sugar, and granulated sugar together with mixer and beat until smooth. Add the eggs one at a time until combined. Add the vanilla and molasses until combined.
  2. In a small mixing bowl whisk together flour, baking soda, salt, and cinnamon. Gradually add to the wet ingredients mixing on low. Increase mixer speed and mix until combined.
  3. Add oats and mix on medium until combined.
  4. Press plastic wrap against dough and chill 30 to 60 minutes.
  5. Preheat oven to 350º F. Form dough into balls and place on parchment covered backing sheet. Bake for 10 minutes or until edges are slightly browned.
