Meatballs

Meatballs are something to me that seem like a lot of work, but whenever I decided to make them, they aren’t nearly as much hassle as I had been picturing. They are great if you are doing low–carb, if you aren’t serve them with pasta. You can use this recipe for your party meatballs in a crock pot. You can also freeze them so they’ll be ready for a quick meal.

First you’ll need your ingredients: ground beef, onion, bread crumbs, egg, salt, and pepper. Very simple ingredients to create something very tasty!

Mix everything together until it is well combined. I use my hands to do this–a spoon just isn’t going to cut it.

You can form them hand, but honestly, a scoop is so much easier. I use a 4 tablespoon scoop (the same one I use for muffins and cupcakes). This recipe made 32 meatballs.

Once you have them scooped out you’ll want to heat oil in a pan then arrange the meatballs in a single layer. Depending on the size of your skillet you’ll have to do them in batches. Turn them to brown every side and cook until there is no pink in their centers.

Ingredients:

  • 5 lbs. Ground Beef
  • 1/2 cup Onion
  • 2 tablespoons Italian Seasoned Bread Crumbs
  • 1 Egg
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • Olive Oil

Instructions:

  1. Mix all ingredients in a large bowl.
  2. Scoop or form mixture into spheres.
  3. Heat 2 tablespoons of oil in large skillet on medium high heat. Arrange meatballs in a single layer (you might have to do multiple batches). Flip with tongs to brown on all sides. Remove when cooked through to center.

Note: You can also use unseasoned bread crumbs or a piece of bread torn up into fine pieces. If you do, add 1 teaspoon of Italian Seasoning.
